Instructions
 

  • Preheat the Grill: Preheat your grill to medium-high heat, approximately 375°F to 400°F (190°C to 205°C).
  • Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and dry them. Cut the sweet potatoes into wedges by slicing them in half lengthwise, and then cut each half into 3 to 4 wedges depending on the size of the sweet potato.
  • Boil the Wedges: Bring a large pot of salted water to boil. Add the sweet potato wedges and boil for 5 to 7 minutes, or until they are just tender but not fully cooked. They will finish cooking on the grill.
  • Season the Wedges: Drain the sweet potatoes well and pat them dry with a kitchen towel. In a large bowl, toss the wedges with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
  • Grill the Wedges: Place the wedges directly on the grill over medium-high heat. Grill for 3 to 4 minutes on each side, or until they are nicely charred and fork-tender.
  • Serve and Enjoy: Transfer the grilled sweet potato wedges to a serving platter. Garnish with freshly chopped parsley. Serve immediately with your choice of dip.
