Ingredients

  • 3 large zucchinis
  • 1 cup of herbed goat cheese you can also use ricotta or cream cheese for a milder option
  • 1/2 cup of roasted red peppers thinly sliced
  • 1/4 cup of fresh basil leaves
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • 1 teaspoon of lemon zest
  • Salt and pepper to taste
  • Optional garnish: Balsamic glaze and additional lemon zest

Instructions

Preparing the Zucchini:

  • Slice the Zucchini: Using a vegetable peeler or mandoline slicer, slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. Aim for 12 to 15 slices per zucchini.
  • Season: Lightly brush both sides of each zucchini strip with olive oil and season with salt and pepper.
  • Grill: Preheat your grill or grill pan to medium-high heat. Grill the zucchini strips for about 1-2 minutes on each side, or until there are grill marks and the strips are pliable. Set aside on a plate to cool.

Making the Filling:

  • Mix: In a small bowl, mix together the herbed goat cheese, lemon zest, and lemon juice until well combined. If the mixture is too thick, a little more lemon juice can be added for consistency.
  • Roast Peppers: If you’re using fresh peppers, roast them ahead of time until charred, then peel, and cut into thin strips.

Rolling the Zucchini:

  • Spread the Cheese: Lay a grilled zucchini strip flat on a work surface. Spread a thin layer of the cheese mixture over the zucchini strip.
  • Add Fillings: Place a few slices of roasted red pepper and a basil leaf at one end of the zucchini strip.
  • Roll: Gently roll the zucchini strip over the fillings, creating a tight roll. Place the roll seam-side down on a serving plate. Repeat with the remaining zucchini strips and fillings.

Garnishing and Serving:

  • Drizzle the zucchini rolls with a bit of extra virgin olive oil and optional balsamic glaze right before serving. Sprinkle with additional lemon zest to enhance the zesty flavor.
  • Serve chilled or at room temperature as a delightful starter or part of a healthy appetizer spread.
  • Enjoy your Zesty Grilled Zucchini Rolls, a perfect bite-sized treat that’s as nutritious as it is delicious. They’re sure to be a hit at any gathering, offering a refreshing twist on traditional appetizers.

Notes

This Zesty Grilled Zucchini Rolls recipe yields approximately 36 to 45 rolls, depending on the size of the zucchini slices and the amount of filling used in each roll. This makes it an ideal choice for gatherings, allowing 3 to 5 rolls per person as a light appetizer.
